This year’s additions feature the balsamic vinegar specialties of Officinae DEFRUTUM.

Nestled in the countryside of Modena, Italy, Officinae DEFRUTUM has been crafting exclusive balsamic vinegars for over four generations. Staying true to tradition, the family uses its own raw materials to create authentic products of exceptional quality.

The particularity of this vinegar farm is that every processing step takes place within one facility, from the pick-up of the grapes, going through the squeezing, cooking and ageing of the grape must in the typical wooden barrels. The result of working exclusively the traditional way are products, 100% natural, free of any kind of chemical agent like caramel, coloring or preservatives and with a 100% full traceability. This is the main difference in comparison to industrial producers, who uses a lot of wine vinegar blended with chemical additives, colorant, caramel etc. to make the Balsamic look darker, thicker, sweeter, tough in a chemical way.

Balsamic Vinegar of Modena PGI
It is a blend of cooked grape must and wine vinegar.
Although the minimum ageing in wooden barrels is 60 days (by regulation), but Officinae DEFRUTUM youngest Balsamic Vinegar is 1 year old and the minimum acidity allowed is 6%. Each transfer of the Balsamic from a bigger wooden barrel is done once a year.

 

Balsamic Condiments
Among the balsamic condiments we have two different options:

  • Balsamic condiment FINE: it’s made of 100% cooked acetified grape must only. Since it has no grape vinegar added, the taste of Balsamic. Condiment is slightly sweeter (less acidic) than the IGP Balsamic Vinegar (PGI).
  • White Balsamic condiment: it is obtained from white grape must cooked with the addition of white wine vinegar. Aged in Oak barrels, it has a fruity and delicate sweet-and-sour taste, with mild acidity (4,5 %).

 

Balsamic Glaze
Balsamic Glaze is a thick product that can be used as a topping to garnish all dishes. The Balsamic glaze is produced exclusively with Balsamic Vinegar of Modena IGP, mixed with concentrated grape must and corn starch of natural origin (GMO and gluten free) to provide the “grip”. This particular texture is perfect for food decoration and dessert garnishing. The glazes are sugar free and fat free, so they are a healthy and light alternative to heavy sauces.
